Even though attempt #1 wasn't posted here. The moral of the story is that, that glycerin artificial pandan extract stuff tastes bitter and weiiiiird.
This time I got all fancy and tried to MAKE pandan extract.I got some frozen leaves from 99 ranch and followed the recipe from Cooking Tackle. It has such pretty pictures so the basic instructions are:
Take leaves and rinse.
Then you cut them up (I used scissors) and tossed them in the blender.
Yeah this part I did kinda wrong because smoke started coming out of my blender. Whoops working it too hard. I read in another recipe that it helps to cut the pandan leaves very small because it's very fibrous.
Then I used cheesecloth to strain the juice and squeeze the pulp into a jar. I probably used too much water. Then Sellan suggested heating it some to make it smell stronger.... I might skip this next time. Oh! it is a super duper green and bright. Then the weird this is if you let sit the green bits will settle at the bottom and the juice is ...well i've already forgotten what color, looks kinda like tea. The green bits are supposed to be more concentrated to I may separate the 2 parts for different uses.
The waffle recipe was adapted from
Viet World Kitchen to be eggless so that Sellan could try it. Although, when I say adapted, I really just mean that I omitted an egg. Yum these were tasty. I poured in way more pandan juice because it didn't smell strongly enough. Then to make up for the extra water I eyeballed in some more flour. Definitely going for the green paste next time. Only hint is to lessen the butter content cuz they were a bit on the heavier side and didn't stick at all to the iron even though other people mentioned that problem. Also I think the egg would lighten up the waffle a lot so yum. These taste more like coconut waffles than pandan waffles but hopefully I can remedy this in attemp #3.
